<div><strong> </strong>Melissa has been studying body work and Chinese  Medicine for the past 10 years. She started her journey at the  International Professional School of Body Work. After taking a class in  Tui Na (Chinese medical massage) she decided to change her direction.  She realized that there was a more comprehensive and helpful way to  benefit her patients; acupuncture and Chinese Medicine. Becoming a  Chinese Medicine practitioner was who she wanted to be. She went to  Pacific College of Oriental Medicine in San Diego, where she studied  acupuncture, herbology, sports medicine, and other traditional Chinese  Medicine modalities.  She did a 2 year internship where she had the  opportunity to work in the clinic at the school as well as off site  clinics such as the free seniors’ clinic downtown, and the Veterans  stand down. She earned her Masters Degree in Traditional Oriental  Medicine (MSTOM) in 2009. After graduation, she studied Dr. Tan’s  balance method. Melissa’s goal is provide the best and most holistic  care for her patients.</div>

<p><strong> </strong><strong> </strong><strong> </strong><strong> </strong><strong> </strong>Jeanne Corso L.Ac. received her first acupuncture treatment in 1979,  and soon thereafter began her own studies in the field of holistic  medicine.  Beginning with massage and kinesiology, she later studied  Traditional Chinese Medicine, graduating from the California Acupuncture  College and becoming licensed to practice in 1987.  For the last 18  years she has specialized in the treatment of addiction, working in  recovery homes and treatment facilities throughout the county, and she  is a member of the National Acupuncture Detoxification Association  (NADA). She is also very successful in the treatment of pain, stress,  female complaints, and mental/emotional issues such as anxiety and  depression.</p>
<p>A warm, compassionate and intuitive healer, patients find Jeanne very  easy to talk to. Her treatments are gentle and precise. She utilizes  auricular acupuncture (using points on the ear) in addition to  meridian-based points.  Jeanne is a great believer in the community  model of acupuncture, and has long believed that treatments should be  affordable – therefore more accessible to the general population.</p>

<p><strong>2 lbs of grass-fed beef</strong> – still partially frozen for easier slicing (you want a lean cut with easily visible striations – I typically use london broil)<br />
<strong>2 Tbsp organic apple cider vinegar </strong><br />
<strong>2 Tbsp cocnut Amino&#8217;s </strong><br />
<strong>2 Tbsp maple syrup</strong>- organic, grade B (or use honey if you prefer)<br />
<strong>1 Tbsp sage sea salt</strong> – see my herb salt recipe <a href="http://balancedbites.com/2010/12/easy-recipe-fresh-herb-sea-salt-blend-rosemary.html" target="_blank">here</a><br />
(or use approx 1 tsp each dried sage &amp; sea salt)<br />
<strong><strong>1/2 Tsp garlic powder<br />
Dash of black pepper </strong></strong>(more if you like it)<strong><strong><br />

</strong>Note: </strong>The marinade should be made to-taste, test the  flavor before applying to your sliced meat. I find it to be a pretty  strong taste just on a spoon/finger dip but that flavor dilutes once  over the meat, so you want it to be fairly strong in the marinade. The  measurements here are approximate and will vary based on your  preferences!</p>

<p>Leave the frenetic energies of the holidays for a little while. Come celebrate the longest day of night which <a href="http://www.sustaincommunityacupuncture.com/wp-content/uploads/2010/12/Solstice.jpg"><img class="alignright size-full wp-image-903" title="Solstice" src="http://www.sustaincommunityacupuncture.com/wp-content/uploads/2010/12/Solstice.jpg" alt="" width="246" height="343" /></a>marks the beginning of our Winter. The day of Solstice is officially on Tuesday, December 21. This is the day when the Earth begins to turn her spin  toward the equator. This event creates the exquisite paradox of increasing the duration of day light even while we are submerged in the deepest time of prolonged darkness.</p>
<p>This ceremony acknowledges the return of the light while focusing celebration for the time of deepest darkness. Deep Winter is the season of Stillness.  It is the time of dreaming.  It is the restive time to prepare for Awakening to manifest your dreams with the arrival of Spring.</p>
<p>Shamanic traditions will be reflected and Crystal Bowl Song will be used to honor the spinning song of the Mother earth.  The ceremony will include story telling, and meditation.</p>
